Dairy-Free Hazelnut Coffee Creamer

This dairy-free, Paleo-friendly coffee creamer has a lot to offer. You start by making thick and creamy almond milk, then sweetening it with maple syrup and hazelnut essence. It requires a few additional steps, but it is well worth it.

This coffee creamer recipe involves a lengthy preparation procedure. Soak the nuts overnight or for at least 3-4 hours before placing them in a container big enough to accommodate them, plus roughly twice the amount (2C) of water and a pinch of salt. Just enough to dissolve the salt, give it a quick swirl. Soak for at least 3-4 hours at room temperature or overnight.

Then, rinse the nuts well under cold running water. In a high-powered blender, combine washed nuts, 2 cups fresh cold water, pure maple syrup, and hazelnut essence. Blend for approximately 2 minutes, starting on low and gradually increasing to medium-high. Alternatively, if using a Vitamix, use the smoothie setting twice, i.e., turn it on after it stops the first time automatically.

If desired, add additional maple syrup and hazelnut essence. To thoroughly combine, pulse the ingredients. Squeeze the nut cream into a wide-mouthed container with a pouring spout after straining it through a nut milk bag. Finally, pour the cream into a suitable vessel, ideally one with a pouring spout. Refrigerate until ready to use, firmly covered. You may keep the nut cream in this manner for up to a week. Once it is ready, pour the appropriate quantity of coffee into the cup and drink.
